  本实验以常规的育种方法，通过对酵母细胞悬液和原生质体进行一系列诱变，经过大量的筛选，最终选育出一株耐高温高产菌株75l _ ( 3566 ) ，并对其进行了生产性能的测定。 75l _ ( 3566 )在40条件下，浓度为20 bx的麦芽汁发酵液中，产酒率高达11 . 5 ，而且发酵速度快，发酵周期可缩短12h ，其生产性能稳定，可以适应大部分以淀粉质为原料的生产厂家的需要。同时本实验对75l _ ( 3566 )进行了发酵条件优化的初步研究。
